Brown Rice Crawfish Jambalaya

Serves 6

Ingredients:

1 cup Carolina® Brown Rice (Whole Grain)
1/4 cup olive oil
1 tsp garlic, minced
2 large onions, chopped
1 Rib celery, chopped
1 green bell pepper, chopped
1 lb crawfish tails, peeled, cooked, and cleaned
1 cup green onion, chopped
1 tbsp parsley, chopped
Salt and cayenne pepper, to taste
hot pepper sauce, optional


Directions:

Prepare rice according to package directions and set aside. Heat olive oil in a large saucepane. Sauté garlic, onion, celery, and bell pepper until tender; add crawfish and green onions; simmer for 10 minutes. Add parsley. Fold in brown rice. Season to taste.
