Brazilian Black Beans and Rice

medium sweet potatoes, halved lengthwise and sliced ¼-inch thick |

(16 oz) diced tomatoes |

orange peel, finely shredded |

fresh parsley, chopped, for garnish |
Directions:
Prepare rice according to package directions. While rice is cooking, cook sweet potatoes in boiling water for 15 minutes. Drain. To cooked black beans and rice; add tomatoes. Stir in orange peel. Fold in diced sweet potatoes. Sprinkle with fresh parsley.
