Brazilian Black Beans and Rice

Serves 6

Ingredients:

1 pkg Carolina® Black Beans and Rice Mix
2 pkg medium sweet potatoes, halved lengthwise and sliced ¼-inch thick
1 can (16 oz) diced tomatoes
1 tsp orange peel, finely shredded
fresh parsley, chopped, for garnish


Directions:

Prepare rice according to package directions. While rice is cooking, cook sweet potatoes in boiling water for 15 minutes. Drain. To cooked black beans and rice; add tomatoes. Stir in orange peel. Fold in diced sweet potatoes. Sprinkle with fresh parsley.
