Ingredients

2 cups cooked, Carolina® White Rice
2 cups (8 oz.) Monterey Jack cheese, shredded
1 1/2 cups chicken breast, cooked and chopped
1 can (12 oz. each) evaporated milk
1/2 cups red onions, finely chopped
2 large eggs, lightly beaten
1/4 cup fresh cilantro, finely chopped
2 tbsp butter or margarine, melted
1 tbsp jalapeños, diced (optional)

Directions

PREHEAT oven to 350 degrees. Grease a 2-quart casserole dish. COMBINE ingredients well in dish. BAKE 45 to 50 minutes or until knife inserted in center comes out clean.
