Nutty Brown Rice Pilaf

Serves 10

Ingredients:

1 cup Carolina® Brown Rice (Whole Grain)
1 small onion, chopped
2 garlic cloves, chopped
3/4 cup walnuts, chopped
3/4 cup green onion, chopped
1/4 cup sunflower seeds
vegetable cooking spray
3/4 cup raisins
1/2 cup fresh mint, chopped
1/4 cup fresh lemon juice
1 cup parsley, chopped
1/2 cup feta cheese, crumbled
1 tsp orange rind
1/4 tsp cayenne pepper


Directions:

Prepare rice according to package directions. Sauté onion, garlic, walnuts, green onions, and sunflower seeds in a frying pan with cooking spray until onions are clear. Add the sautéed ingredients to the cooked rice. Stir in remaining ingredients. Mix well.
