(8 ozs) Monterey Jack cheese, shredded
cooked, diced chicken (about 2 cups)
(12 oz) evaporated milk
red onion, finely chopped
large eggs, lightly beaten
fresh parsley, chopped
butter or tub margarine, melted
fresh jalapeño, minced (optional)
salt and pepper, to taste (optional)
